Fruit For Your Sleep: 4 Healthy Cherry Recipes

Do you have trouble sleeping? Is turning off at night often a chore that involves stressing about whether you are going to be able to get yourself some zzzs that night? One food that has been found to help improve your sleep are cherries. High in melatonin, this fruit could reduce your insomnia and help you catch up on some much-needed, refreshing sleep. These 4 recipes are healthy and focused on this fabulous fruit.

 

Cherry, Bulgur Salad

Bring 2 cups of water to a boil in a medium saucepan. Stir in 1 cup bulgur and ¼ teaspoon salt. Cover, and reduce heat to a low, cooking until the water is absorbed and the bulgur is tender (about 15 minutes). In a medium bowl, whisk together 2 tablespoons walnut oil, 3 tablespoons lemon juice, and 1 minced shallot. Season with salt and pepper, and add bulgur; toss to mix. Place in the refrigerator, uncovered, for about 10 minutes. Add ½ pound halved and pitted cherries, ½ cup chopped fresh herbs (tarragon and parsley), and ¼ cup coarsely chopped walnuts. Season with salt and pepper to taste.

 

Chicken With Cherries & Arugula

Mix together 1 small shallot (halved lengthwise and thinly sliced), 1 teaspoon red wine vinegar, and 1 tablespoon extra-virgin olive oil. Preheat grill to medium-high; drizzle 1 tablespoon olive oil over 1 pound boneless, skinless chicken and season with coarse salt and pepper. Grill chicken until cooked through (about 4-5 minutes per side). Then, let stand for about 5 minutes. Toss together shallot mixture, 2 cups cherries (pitted and halved), and 1 cup baby arugula in a bowl. Season with salt and pepper, and serve atop the chicken. 

 

Cherry Tea Smoothie
Bring ¾ cup water to a simmer. Remove from heat and immediately add 2 Rooibos tea bags to the water; let steep, uncovered, for about 8 minutes. Discard the tea bags and refrigerate until cold (about 40 minutes). Puree together the chilled tea, 6 ounces silken tofu, 2 cups frozen cherries, 1 cup frozen grapes, and ½ cup frozen blueberries; serve and enjoy.

 

Ricotta, Cherry Crostini

Heat oven to 375 degrees Fahrenheit. Mix together 1 ¼ cups cherries (pitted and chopped) and 1 tablespoon light brown sugar; let sit for about 10 minutes. Brush 4 slices of rustic bread with olive oil and toast until golden (about 5-7 minutes). Mix ½ cup fresh ricotta with grated zest of 1 lemon. Spread ricotta on bread, and top with cherry mixture. Garnish with a bit more lemon zest.
